Wine description

A „late harvest cuvée” made using the botrytised berries harvested in late November from Furmint and Hárslevelű varieties from the Lőcse vineyard.

A wine made with the traditional szamorodni technology. Fermented and aged for over a year in medium charred, Szerednye-type (220 l) casks. Because of its high content of solids and residual sugar it could even be regarded as a young Aszú. Its fragrance bears the caracteristics of overripe apricot and fig fruit which are then completed during ageing by the sophisticated vanilla aroma of the cask. It is a balanced wine of definite contour and outstanding elegance. It has oily, majestic, slow movement in the glass as a result of its full-bodied nature.

Tokaj balls of wine hidden in chocolate cups

Ingredients for 4

100 ml Béres Cuvée, 150 g sugar, 5 g jelly powder, the rind of 1 lemon, 200 g mascarpone cheese, 200 g flour, 200 g icing sugar, 2 egg yolks, 100 g margarine, 100 g chocolate.

 

Preparation

Make a short crust pastry from the flour, margarine, icing sugar and egg yolk, then leave it in the fridge for 30 minutes. Afterwards bake in the oven in little cup shapes.

Dissolve the jelly powder in the wine, then add the mascarpone, the sugar, the grated rind of lemon, then cool in the fridge for a few hours. Make little balls from the jelly and serve them in the short bread cups. Gourmets can also add sultanas soaked in aszú.

5 eggs, 200 g sugar, 100 g flour, 6 g baking powder, 250 g quark, the grated rind of 1 lemon, 8 g vanilla sugar, 100 ml cream, 100 g blueberry jam

 

Preparation

Make an egg sponge from the egg, flour, sugar and baking powder, spread the blueberry jam on it and roll up. Mix quark, cream and other ingredients until you get a light cream. Slice the sponge roll, fill cream into a piping bag and make a swirl on each slice. Mix the remainder of the jam with a little water and sprinkle the swirls with it when serving.
